Ingredients:
4 nice tilapia fillets
1 cup breadcrumbs
3 tsp. Italian seasoning
3 tsp. paprika
2 tsp. onion powder
3 tsp. garlic powder
2 tbsp. grated parmesan cheese
1 tsp. salt
8 sundried tomatoes
2 tbsp. olive oil
1/3 cup flour (for dusting)
2 eggs beaten
Preparation
In a food processor combine the breadcrumbs, onion powder, seasoning, paprika, garlic powder, salt, and Parmesan cheese. Pulse until well mixed
Add the sundried tomatoes and olive oil and pulse again.
Pour some olive oil on the bottom of a roasting pan and set aside.
Preheat the oven to 350°F.
Rinse the tilapia fillets under water and pat dry.
Place the flour on a plate and the beaten eggs on another plate. Place the breadcrumb mixture in a bowl.
Place the tilapia fillets first in the flour until lightly coated. Then place in the thee beaten egg until coated.
Finally press the tilapia in the breadcrumb taking care to have breadcrumbs all around.
When all sides are well breaded transfer the fillet to the baking pan.
Place the baking pan in the oven and cook for 15 minutes.
